Welcome to the Art of Lardo! I am Fausto Guadagni, the founder of the company that preserves the art of Colonnata in Lardo di Colonnata and in Traditional Agri-Food Products. Each piece tells the story and passion with Italian pork, sea salt, herbs, and spices, without preservatives, in compliance with the PGI regulations and traditions.
Our story begins with the cultivation of our grandparents' quarry in the Canaloni, extracting marble to preserve the lard. The family trattoria (now "Locanda Apuana") built our reputation with the soft and fragrant lardo. Pioneers in exporting Lardo di Colonnata to Europe, Switzerland, and Canada, we preserve tradition and embrace innovation with advanced packaging techniques for sliced and ground lard.
Marble is to sculpture as lardo is to enfleurage; the mission is to transform every tasting into an estranging experience. Not just the classic: we proudly present our "special" Lardi, with unique ingredients like mint, capers, vegetables, or fruits, distilled spirits, or beers, joining pork backfat and sea salt, creating new symphonies of taste.
