Cherubini Trout Farming was born in Visso, historical village located in the heart of Monti Sibillini National Park, in an unspoilt valley, on the border between Marche and Umbria, at an altitude of approximately 650 metres and within walking distance of the source of the Nera River. The company's pioneer was, in 1950, Domenico Cherubini, followed by his son Remo together with his two sons Domenico and Giovanni, who in 1965 set up a second farm that is still the central hub of all activity. It's the forth generation now, Marco Stefano Lorenzo ed Anna, that carry on the family business with pride, passion and dedication. There are two main facilities in which the entire reproductive cycle of the trout occurs: the hatchery, where trouts are born, and the fattening plant, located further downstream, where they are transferred once they have reached the size of a few centimetres, passing by external tanks of bigger volume. Normally, this evolutionary cycle takes place within two years under strict health controls throughout the supply chain that seek to ensure the well-being of the trout during rearing and feeding, for the safety and guarantee of the product. The farmed species are brown, rainbow, salmon trouts and chars. The excellent quality of the physical and chemical parameters of the environment, together with the oxygenation of the water through the 'cascade system' and the modest fluctuations in temperature between summer and winter, give these waters a high biological capacity, contributing to a particularly favourable habitat for the birth, development and growth of the trout, making it a product of the highest quality. The processing of the product is in-house, where specialised staff ensure the selection and careful production of the finished product.
